Ingredienti per 2 persone
- 180 g di riso carnaroli di Vercelli
- 250 g di gamberi gobbetti
- 400 ml di brodo di pesce
- gambi di prezzemolo qb
- sale e pepe
- 20 g di burro di panna di masseria pugliese
Per la bisque di gamberi
- le teste dei gamberi
- 1 cipolla bianca
- 1 costa di sedano
- 1 carota
- 2 pomodori fiaschetto di Manduria (Ta)
- 1 spicchio di aglio
- 300 ml di acqua
- sale

“Gobbetti” Shrimp Risotto
Ingredients for 2 people
- 180 g Carnaroli rice from Vercelli
- 250 g “gobbetti” shrimp
- 400 ml fish stock
- parsley stalks (to taste)
- salt and pepper
- 20 g Puglian farmstead cream butter
For the shrimp bisque
- shrimp heads
- 1 white onion
- 1 celery stalk
- 1 carrot
- 2 Fiaschetto tomatoes from Manduria (Taranto)
- 1 clove of garlic
- 300 ml water
- salt
- 1 tablespoon multi-varietal Puglian extra virgin olive oil
- parsley
Wash the shrimp; remove the heads, shells, and intestinal tracts; cut the meat into uniform pieces and set aside.
Method for the shrimp bisque: trim, peel, and chop the carrot; remove the outer layer of the onion; peel the garlic; wash and finely chop the celery; wash, dry, and halve the tomatoes.
In a wide, shallow saucepan, add the oil, carrot, garlic, celery, onion, and tomatoes. Sauté the mixture, and after 5 minutes, add the shrimp heads; crush them with a wooden spoon and cook for another 5 minutes. Then add the cold water and salt, and cook over low heat for 45 minutes. Pass the mixture through a food mill and strain through a fine-mesh sieve. Reduce the shrimp bisque further over high heat.
Toast the rice dry in a wide, shallow saucepan, ensuring it is evenly distributed. Toast it evenly for 2 minutes. Touch it with the back of your hand; if it is very hot, add the boiling fish stock and continue cooking, adding more stock as needed. Two minutes before the end, add the warm shrimp bisque and the shrimp. Stir in the butter to finish.
Plate the risotto, garnish with the chopped parsley stems, and serve immediately.
