Ingredienti
- 2 kg di zucchine di Leporano (Ta)
- olio extra vergine di olive multivarietali pugliese qb
- 4 spicchi di aglio del Gargano
- sale semi grosso qb
Buon lavoro

Zucchini in Oil
Ingredients
- 2 kg of zucchini from Leporano (Taranto)
- multivarietal Apulian extra virgin olive oil (as needed)
- 4 cloves of Gargano garlic
- coarse salt (as needed)
- 1 bunch of mint (as needed)
- white wine vinegar (as needed)
Wash and dry the zucchini, then cut them into 1 cm thick sticks.
Arrange them neatly in a large glass jar.
Every three or four layers, add a splash of vinegar and some salt.
Press down firmly with your hands (the zucchini should be covered by the vinegar), place an inverted ceramic plate on top, and set a weight on it (such as a smooth river stone or a bottle filled with water).
Let rest for 24 hours, then drain off the dark liquid that has formed; gently squeeze the zucchini and separate the sticks from one another. Place them into sterilized glass jars that already have a layer of oil at the bottom.
Press the zucchini down and layer in the garlic and mint; pour in oil until it reaches 1 cm below the rim.
Seal the jars and keep them in sight for a few days, as the oil level tends to drop and will need to be topped up.
Store in the pantry and do not consume until at least two months have passed.
Happy preparing
