Mezzelune with pumpkin, parmigiano and speck with butter, parmigiano and rosemary

Ingredients for 2 people

  • 160 g of Apulian durum wheat semolina
  • 80 ml of water
  • 200 g of “delica” pumpkin
  • 30 g of aged Parmigiano Reggiano 30 months
  • 50 g of speck
  • nutmeg to taste
  • parmigiano reggiano flakes to taste
  • fresh rosemary a few needles
  • salt

On a wooden board, combine the semolina, make a hole in the center and add the water. Mix, form a ball and leave to rest for 30 minutes wrapped in cling film.

Cut the pumpkin into slices, place it on a non-stick baking tray and place in a preheated oven covered with aluminum foil for 30 minutes. When cooked, remove the peel and mash it with a fork, add the parmigiano, chopped speck and nutmeg.

Roll out a thin sheet of dough on a floured surface with a rolling pin. Using a 6 cm diameter pastry cutter, cut out circles, fill them with the mixture and close them very well, letting the air out.

In a large pan, brown the butter with the rosemary over a very low heat, add the crescents previously boiled in salted water for 4 minutes, and mix delicately and carefully.

Plate the crescents, finishing the dish with the parmigiano. Serve immediately.

Enjoy your meal
