Rose di pasta ripiena di orata e patate al limone su salsa di bietole selvatiche e fiori di finocchio

Ingredienti per 4 persone

Per la pasta

  • 300 g di semola di grano duro pugliese
  • 1 barbabietola piccola cotta
  • acqua qb

Per il ripieno

  • 250 g di filetti di orata
  • 100 g di patate rosse
  • 20 g di formaggio pecorino
  • buccia di limone qb
  • 2 cucchiai di olio extra vergine di olive celline pugliesi
  • 1 spicchio di aglio
  • sale

Per la salsa di bietole

  • 300 g di bietole selvatiche
  • 1 fettina di spicchio di aglio
  • olio extra vergine di olive celline pugliesi
  • sale
  • burro di panna centrifugato qb
  • fiori di finocchio

Procedimento per la pasta: Frullare molto bene e setacciare, con un colino a maglie fitte, la barbabietola. In 4 contenitori suddividere la semola ed aggiungere la crema di barbabietola e l’acqua, in piccole dosi differenti in 3 delle 4 ciotole, nella 4 solo acqua, amalgamare, inizialmente con una forchetta e poi con le mani guantate, fino a ottenere dei composti lisci. Avvolgere gli impasti in pellicola e far riposare per 1/2 ora.

Procedimento per il ripieno: lessare, sbucciare e schiacciare con una forchetta le patate, salare ed aggiungere una bella grattugiata di limone. Rosolare in padella, con l’olio e l’aglio, i filetti di orata per pochi minuti. Togliere l’aglio e tritare finemente a coltello, aggiungere le patate, il formaggio pecorino grattugiato e il sale, amalgamare con cura.

Procedimento per le rose: stendere delle sfoglie sottili e con l’aiuto di un coppa pasta tagliare dei tondi di 7,5 cm di diametro, allineare orizzontalmente 4 cerchi di pasta di colore differenti, sovrapporli leggermente, farcire con un po’ di ripieno, chiuderli uno ad uno molto bene, arrotolare, fissare l’ultimo petalo della rosa al resto del fiore con una goccia di acqua che attaccherà la pasta, aprire quindi leggermente le punte delle rose, per formare i petali. Posizionare su teli infarinati di cotone ad asciugare.

Procedimento per la salsa di bietole: pulire, lavare e sbianchire in acqua salata le foglie di bietola, sgocciolarle e inserirle in una ciotola contenente acqua freddissima, sgocciolarle ancora ed inserirle in un frullatore con l’olio e l’aglio. Assaggiare e se necessario salare. Mettere la salsa ottenuta in un bagnomaria.

Lessare le rose in acqua salata per 4 minuti. Sgocciolarle e ripassarle in padella delicatamente con il burro.

Impiattare la salsa di bietole, adagiare le rose di pasta all’orata e patate al limone rifinendo il piatto con i fiori di finocchio, servire subito.

Pasta “roses” stuffed with sea bream and potatoes with lemon on a sauce of wild beets and fennel flowers

Ingredients for 4 people

For pasta

  • 300 g of Apulian durum wheat semolina
  • 1 small cooked beetroot
  • water to taste

For the stuffing

  • 250 g of sea bream fillets
  • 100 g of red potatoes
  • 20 g of pecorino cheese
  • lemon peel to taste
  • 2 tablespoons of extra virgin olive oil from Apulian Celline olives
  • 1 clove of garlic
  • salt

For the chard sauce

  • 300 g of wild chard
  • 1 slice of garlic clove
  • extra virgin olive oil from Apulian celline olives
  • salt
  • butter to taste
  • fennel flowers

Procedure for the pasta: Blend very well and sift the beetroot with a tightly meshed sieve. Divide the semolina into 4 containers and add the beetroot cream and water, in small different doses in 3 of the 4 bowls, in the 4 only water, mix, initially with a fork and then with gloved hands, until smooth compounds are obtained. Wrap the dough in cling film and let it rest for 1/2 hour.

Procedure for the filling: boil, peel and mash the potatoes with a fork, salt and add a nice grated lemon. Brown the sea bream fillets in a pan with oil and garlic for a few minutes. Remove the garlic and chop finely with a knife, add the potatoes, grated pecorino cheese and salt, mix carefully.

Procedure for the roses: roll out thin sheets and with the help of a pastry bowl cut rounds of 7.5 cm in diameter, horizontally align 4 circles of different colored dough, overlap them slightly, stuff with a little filling, close them one by one very well, roll up, fix the last petal of the rose to the rest of the flower with a drop of water that will attack the paste, then slightly open the tips of the roses, to form the petals. Place on floured cotton sheets to dry.

Procedure for the chard sauce: clean, wash and bleach the chard leaves in salted water, drain them and place them in a bowl containing very cold water, drain them again and put them in a blender with the oil and garlic. Taste and salt if necessary. Put the sauce obtained in a bain-marie.

Boil the roses in salted water for 4 minutes. Drain them and gently sauté them in the pan with the butter.

Serve the chard sauce, place the pasta “roses” with sea bream and lemon potatoes, finishing the dish with the fennel flowers, serve immediately.
