Fusilli al ferretto con seppie e fave fresche

Ingredienti per 2 persone

  • 160 g di semola di grano duro pugliese
  • 90 ml di acqua circa
  • 300 g di seppie fresche dello Ionio
  • qualche goccia di nero di seppia
  • 300 g di fave fresche pugliesi
  • 1/2 spicchio di aglio pugliese
  • 30 ml di vino bianco
  • 3 cucchiai di olio extra vergine di olive cellina di Avetrana (Ta)
  • sale e pepe
  • prezzemolo tritato qb
  • buccia di limone qb

Su una base in legno mettere la semola, fare il buco al centro ed inserire l’acqua a filo. Amalgamare. Il composto dovrà risultare liscio e sodo. Far riposare per 15 minuti.
Formare dei cilindri sottili lunghi 5 cm, posizionare il ferretto in diagonale sul pezzo di pasta esercitando una lieve pressione.
Sfilare delicatamente la pasta dal ferretto e far asciugare per 1 ora.

Togliere il baccello alle fave, lavarle velocemente sotto acqua corrente, asciugarle e mettere da parte.

Pulire, lavare ed asciugare le seppie (conservare la sacca con il nero). Tritare finemente parte del corpo e la parte restante tagliarla a pezzi regolari.

In una padella capiente far rosolare l’aglio tritato con l’olio, aggiungere le seppie, sfumare con il vino bianco, mettere il coperchio e cuocere per 15 minuti a fiamma bassa. Aggiungere ora le fave, il nero di seppia e il pepe. Cuocere per altri 5 minuti, assaggiare e se necessario aggiungere il sale.

Lessare in abbondante acqua salata i fusilli per 4 minuti, sgocciolarli ed inserirli in padella, spadellare 1 minuto.

Impiattare i fusilli al ferretto con le seppie e le fave, rifinendo il piatto con la buccia di limone e il prezzemolo. Servire subito.

Fusilli pasta to the underwire with cuttlefish and fresh broad beans

Ingredients per 2 peolple

  • 160 g of Apulian durum wheat semolina
  • 90 ml of water approx
  • 300 g of fresh cuttlefish from the Ionian Sea
  • a few drops of cuttlefish ink
  • 300 g of fresh Apulian broad beans
  • 1/2 clove of Apulian garlic
  • 30 ml of white wine
  • 3 tablespoons of extra virgin cellina olive oil from Avetrana (Ta)
  • salt and pepper
  • chopped parsley to taste
  • lemon peel to taste

Put the semolina on a wooden base, make a hole in the center and pour in the water. Mix. The mixture should be smooth and firm. Let it rest for 15 minutes.
Form thin cylinders 5 cm long, place the underwire diagonally on the piece of dough, exerting a slight pressure.
Gently remove the dough from the underwire and let it dry for 1 hour.

Remove the pods from the beans, wash them quickly under running water, dry them and set aside.

Clean, wash and dry the cuttlefish (keep the bag with the black). Finely chop part of the body and the remainder cut into regular pieces.

In a large pan, brown the minced garlic with the oil, add the cuttlefish, deglaze with the white wine, put the lid on and cook for 15 minutes over low heat. Now add the broad beans, cuttlefish ink and pepper. Cook for another 5 minutes, taste and add salt if necessary.

Boil the fusilli in plenty of salted water for 4 minutes, drain and put them in the pan, sauté 1 minute.

Serve the underwire fusilli with the cuttlefish and broad beans, finishing the dish with the lemon peel and parsley. Serve immediately.
