Cavatelli di semola con ceci freschi, cozze tarantine e bucce di pomodori fiaschetto essiccate

Ingredienti per 2 persone

  • 160 g di semola di grano duro pugliese
  • acqua qb
  • 500 g di ceci freschi di Ferrandina (Mt)
  • 1 costa di sedano
  • 1 spicchio di aglio del Gargano
  • 500 g di cozze nere tarantine
  • 2 cucchiai di olio extra vergine di olive cellina di Nardò
  • sale e pepe
  • bucce di pomodori fiaschetto di Manduria (Ta) essiccate al sole

Su una tavola in legno adagiare la semola, fare il buco al centro ed inserire tanta acqua fino a che risulterà un composto sodo, liscio e setoso.

Fare dei cordoncini lunghi, quindi tagliarli a tocchetti regolari. Trascinare i piccoli pezzi aiutandosi con un coltello a punta tonda, fino a richiuderli su se stessi.

Togliere il baccello, lavare ed asciugare i ceci freschi.

 

 

 

 

Lavare, togliere il bisso e sgusciare le cozze con l’apposito attrezzo (grammella).

In una casseruola bassa e capiente far rosolare l’olio, l’aglio e il sedano, aggiungere i ceci, 50 ml di liquido delle cozze filtrato, 100 ml di acqua bollente e il pepe, mettere il coperchio e cuocere a fiamma bassa per 10 minuti. Togliere l’aglio ed il sedano.

Lessare i cavatelli in abbondante acqua poco salata per 4 minuti, sgocciolarli ed aggiungerli ai ceci, inserire le cozze e cuocere ancora per 2 minuti.

Impiattare i cavatelli ai ceci freschi e cozze rifinendo il piatto con le bucce essiccate di pomodori fiaschetto. Servire subito.

Semolina cavatelli with fresh chickpeas, Taranto mussels and dried fiaschetto tomato skins

Ingredients for 2 people

  • 160 g of Apulian durum wheat semolina
  • water to taste
  • 500 g of fresh chickpeas from Ferrandina (Mt)
  • 1 stick of celery
  • 1 clove of Gargano garlic
  • 500 g of black mussels from Taranto
  • 2 tablespoons of cellina di Nardò extra virgin olive oil
  • salt and pepper
  • dried peels of fiaschetto di Manduria tomatoes (Ta)

On a wooden table lay the semolina, make the hole in the center and add a lot of water until the mixture is firm, smooth and silky.

Make long cords, then cut them into regular chunks. Drag the small pieces with the help of a round tip knife, until they close on themselves.

Remove the pod, wash and dry the fresh chickpeas.

Wash, remove the byssus and shell the mussels with the appropriate tool (grammella).

In a low and large saucepan, brown the oil, garlic and celery, add the chickpeas, 50 ml of filtered mussel liquid, 100 ml of boiling water and pepper, put the lid on and cook over low heat for 10 minutes. Remove the garlic and celery.

Boil the cavatelli in abundant lightly salted water for 4 minutes, drain and add them to the chickpeas, add the mussels and cook for another 2 minutes.

Serve the cavatelli with fresh chickpeas and mussels, finishing the dish with the dried skins of fiaschetto tomatoes. Serve immediately.
