Scialatielli all’uovo con asparagi e cozze tarantine

Ingredienti per 2 persone

Per gli scialatielli

  • 200 g di semola rimacinata di grano duro pugliese
  • 60ml di latte intero
  • 1 uovo piccolo di masseria bio pugliese di cat.0
  • 5 g di formaggio pecorino pugliese stag. 12 mesi
  • 5 g di parmigiano reggiano
  • 1 cucchiaino di olio extra vergine di olive leccine

Per il condimento

  • 200 g di asparagi selvatici di Lizzano (Ta)
  • 300 g di cozze tarantine
  • 100 ml di acqua
  • 2 spicchi di aglio rosso
  • 2 cucchiai di olio extra vergine di olive leccine
  • sale e pepe

Procedimento per la pasta

Sulla tavola in legno adagiare la semola rimacinata, fare il buco al centro, inserire l’uovo, il latte, l’olio, i formaggi e cominciare ad amalgamare con una forchetta.  Formare una palla, dovrà risultare liscia e soda. Far riposare, coperta da un canovaccio di cotone, per 20 minuti.

Stendere una sfoglia unica rettangolare con il mattarello, tagliare con un coltello affilato tante strisce dallo spessore di  5 mm. e lunghe 15 cm. Far asciugare per un paio di ore.

Procedimento per il condimento

Pulire, lavare, eliminare la parte legnosa del gambo e tagliare a pezzi regolari gli asparagi. Sbianchire per 3 minuti in acqua salata (questa operazione servirà ad eliminare parte del gusto amaro degli asparagi). Sgocciolare. Tagliare le punte e la parte restante a rondelle. Cuocere in padella con 1 cucchiaio di olio e l’aglio per 6 minuti. Togliere l’aglio.

Lavare, togliere il bisso e rimuovere le eventuali impurità dai gusci alle cozze. Sciacquare ancora velocemente sotto acqua corrente. Inserirle in una larga e bassa padella con 1 spicchio di aglio schiacciato e 1 cucchiaio di olio. Mettere sul fuoco a fiamma media,  spargi  fiamma e coperchio. Prelevarle man mano che si aprono con una pinza, terminata questa operazione, filtrare il liquido con colino a maglie fitte, sgusciare le cozze e mettere da parte.

Lessare gli scialatielli in abbondante acqua poco salata per 4 minuti, sgocciolarli ed inserirli nella padella degli asparagi, aggiungere 30 ml di liquido delle cozze bollente. Ad 1 minuto dal termine della cottura aggiungere le cozze e spadellare ancora.

Impiattare gli scialatielli agli asparagi e cozze, rifinendo il piatto con il pepe al mulinello.

Egg “scialatielli” pasta with asparagus and Taranto mussels

Ingredients for 2 people

For the scialatielli

200 g of remilled durum wheat semolina from Puglia
60ml of whole milk
1 small organic Apulian farm egg of cat.0
5 g of Apulian pecorino cheese aged. 12 months
5 g of Parmigiano cheese
1 teaspoon of Leccine extra virgin olive oil

For the dressing

200 g of wild asparagus from Lizzano (Ta)
300 g of Taranto mussels
100 ml of water
2 cloves of red garlic
2 tablespoons of extra virgin olive oil from Leccine
salt and pepper

Procedure for pasta

On the wooden table lay the re-milled semolina, make the hole in the center, insert the egg, milk, oil, cheeses and begin to mix with a fork. Form a ball, it should be smooth and firm. Let it rest, covered with a cotton cloth, for 20 minutes.

Roll out a single rectangular sheet with a rolling pin, cut many strips 5 mm thick with a sharp knife. and 15 cm long. Let it dry for a couple of hours.

Procedure for the dressing

Clean, wash, remove the woody part of the stem and cut the asparagus into regular pieces. Blanch for 3 minutes in salted water (this operation will eliminate part of the bitter taste of the asparagus). Drain off. Cut the tips and the rest into washers. Cook in a pan with 1 tablespoon of oil and garlic for 6 minutes. Remove the garlic.

Wash, remove the byssus and remove any impurities from the shells of the mussels. Rinse quickly again under running water. Place them in a large, low pan with 1 clove of crushed garlic and 1 tablespoon of oil. Put on the fire over medium heat and cover. Take them as they open with pliers, after this operation, filter the liquid with a tightly meshed sieve, shell the mussels and set aside.

Boil the scialatielli in abundant lightly salted water for 4 minutes, drain and put them in the asparagus pan, add 30 ml of boiling mussel liquid. 1 minute from the end of cooking, add the mussels and sauté again.

Serve the scialatielli with the asparagus and mussels, finishing the dish with the whirled pepper.
