Spaghetti con gli scampi

Ingredienti per 2 persone

  • 180 g di spaghetti di semola pugliese
  • 10 scampi dello Ionio
  • 1 carota
  • 1 costa di sedano
  • 1 cipollina bianca
  • 2 pomodori ciliegia
  • 1 spicchio di aglio
  • 20 ml di Albana
  • 3 cucchiai di olio extra vergine di olive ogliarola del tarantino
  • 1 cucchiaio di prezzemolo fresco tritato
  • peperoncino secco tritato qb
  • sale e pepe

Spuntare, pelare e tagliare a pezzi la carota, togliere la prima foglia alla cipollina, sbucciare l’aglio, lavare e tagliare a pezzettini il sedano. Tagliare a 1/2 i pomodori.

Lavare, togliere le teste, l’intestino e i carapaci agli scampi (conservarne 2 interi per la decorazione del piatto), metterli da parte.

In una casseruola larga e bassa, inserire 2 cucchiai di l’olio, la carota, l’aglio, il sedano, la cipolla e i pomodori, rosolare e dopo 5 minuti aggiungere i carapaci e le teste degli scampi, cuocere per 5 minuti. Aggiungere quindi 300 ml di acqua fredda e cuocere per 3/4 d’ora a fiamma bassa. Tritare il tutto in un passaverdure, filtrare con un colino a maglie fitte.

In una padella capiente rosolare con 1 cucchiao di olio i 2 scampi interi, sfumarli con l’Albana per 1 minuto. Estrarre dalla padella e tenere in caldo.

Lessare per 3 minuti gli spaghetti, quindi sgocciolarli ed inserirli nella padella, finire di “risottarli” con il fumetto bollente per altri 8 minuti. Si creerà una gustosissima consistenza cremosa a cui aggiungeremo fuori dal fuoco gli scampi sgusciati. Aggiungere metà del prezzemolo, il peperoncino  e spadellare per 1 minuto.

Impiattare gli spaghetti agli scampi rifinendo il piatto con gli scampi interi, il restante prezzemolo e il pepe al mulinello. Servire subito.

Spaghetti with scampi

Ingredients for 2 people

  • 180 g of Apulian semolina spaghetti
  • 10 Ionian scampi
  • 1 carrot
  • 1 stick of celery
  • 1 white onion
  • 2 cherry tomatoes
  • 1 clove of garlic
  • 20 ml of Albana
  • 3 tablespoons of Ogliarola del Tarantino extra virgin olive oil
  • 1 tablespoon of chopped fresh parsley
  • chopped dry chili to taste
  • salt and pepper

Tick, peel and cut the carrot into pieces, remove the first leaf from the chives, peel the garlic, wash and cut the celery into small pieces. Cut the tomatoes into 1/2.

Wash, remove the heads, intestines and carapaces from the scampi (keep 2 whole for the decoration of the dish), set them aside.

In a large and low saucepan, add 2 tablespoons of oil, carrot, garlic, celery, onion and tomatoes, brown and after 5 minutes add the shells and the heads of the prawns, cook for 5 minutes. Then add 300 ml of cold water and cook for 3/4 of an hour over low heat. Chop everything in a vegetable mill, filter with a fine mesh strainer.

In a large pan, brown the 2 whole scampi with 1 tablespoon of oil, blend them with Albana wine for 1 minute. Remove from the pan and keep warm.

Boil the spaghetti for 3 minutes, then drain them and put them in the pan, finish “risottarlo” with the hot fumet for another 8 minutes. It will create a very tasty creamy consistency to which we will add the shelled scampi off the heat. Add half the parsley, the chilli and sauté for 1 minute.

Serve the spaghetti with scampi, finishing the dish with the whole scampi, the remaining parsley and pepper. Serve immediately.
