Ingredienti per 2 persone
- 180 g di riso carnaroli di Vercelli
- 250 g di gamberi rossi
- 12 gamberi rossi abbattuti (per la decorazione dei piatti)
- 400 ml di brodo di pesce
- gambi di prezzemolo qb
- sale e pepe
- 20 g di burro di panna di masseria pugliese
Per la bisque di gamberi
- le teste dei gamberi rossi
- 1 cipolla bianca
- 1 costa di sedano
- 1 carota
- 2 pomodori da serbo giallo rossi di Crispiano (Ta)
- 1 spicchio di aglio
- 300 ml di acqua
- sale
- 1 cucchiaio di olio extra vergine multi varietali di Crispiano (Ta)
Lavare, togliere le teste, i carapaci e il budello ai gamberi, tagliarli a pezzi regolari e metterli da parte. Quelli abbattuti pulirli e lasciarli interi.
Procedimento per la bisque di gamberi: spuntare, pelare e tagliare a pezzi la carota, togliere la prima foglia alla cipolla, sbucciare l’aglio, lavare e tagliare a pezzettini il sedano, lavare, asciugare e tagliare a metà i pomodori.
In una casseruola larga e bassa, inserire l’olio, la carota, l’aglio, il sedano, la cipolla ed i pomodori, rosolare e dopo 5 minuti aggiungere le teste dei gamberi, schiacciarle con un cucchiaio di legno, cuocere per 5 minuti. Aggiungere quindi l’acqua fredda, il sale e cuocere per 3/4 d’ora a fiamma bassa. Tritare il tutto in un passa verdure, filtrare con un colino a maglie fitte. Far ridurre ancora su fiamma vivace la bisque di gamberi.
Tostare il riso a secco in una casseruola larga e bassa, per far sì che il riso sia distribuito bene. Tostarlo uniformemente per 2 minuti. Toccarlo con il dorso di una mano, se è molto caldo, possiamo aggiungere il brodo di pesce bollente, cuocere aggiungendo altro brodo, a 2 minuti dalla fine aggiungere la bisque di gamberi calda ed i gamberi. Mantecare con il burro.
Impiattare il risotto rifinendo il piatto con i gambi di prezzemolo tritati ed i gamberi crudi, servire subito.

Red Shrimp Risotto
Ingredients for 2 people
- 180 g Vercelli Carnaroli rice
- 250 g red shrimp
- 12 frozen red shrimp (for garnishing)
- 300 ml fish stock
- parsley stalks to taste
- salt and pepper
- 20 g Masseria Pugliese cream butter
For the shrimp bisque
- red shrimp heads
- 1 white onion
- 1 celery stalk
- 1 carrot
- 2 yellow, red, storage tomatoes from Crispiano (TA)
- 1 garlic clove
- 400 ml water
- salt
- 1 tablespoon Crispiano (TA) extra virgin olive oil
Wash, remove the heads, shells, and guts from the shrimp. Cut them into even pieces and set aside. Clean the frozen shrimp and leave them whole.
Shrimp bisque method: trim, peel, and chop the carrot, remove the top leaf from the onion, peel the garlic, wash and chop the celery, and wash, dry, and halve the tomatoes.
In a large, shallow saucepan, add the oil, carrot, garlic, celery, onion, and tomatoes. Sauté for 5 minutes, then add the shrimp heads, crushing them with a wooden spoon. Cook for 5 minutes. Then add the cold water and salt and cook for 3/4 hour over low heat. Pulse everything in a food mill, strain through a fine-mesh sieve. Reduce the shrimp bisque again over high heat.
Toast the rice in a large, shallow saucepan, ensuring the rice is evenly distributed. Toast evenly for 2 minutes. Touch it with the back of your hand; if it’s very hot, you can add the boiling fish stock, cook, and add more stock. Two minutes before the end, add the hot shrimp bisque and the shrimp. Stir in the butter.
Plate the risotto, garnishing the dish with the chopped parsley sprigs and the raw shrimp. Serve immediately.
