Focaccia di farro al tonno fresco, sponsali, pomodori San Marzano e capperi

Ingredienti per 4 persone

per l’impasto

  • 400 g di semola di farro pugliese
  • 100 g di farina di grano tenero macinata a pietra di tipo 1
  • 450 g di acqua circa
  • 20 g di olio extra vergine di olive multivarietali fruttato leggero
  • 13 g di sale fino
  • 2 g di lievito di birra

per il ripieno

  • 400 g di filetti di tonno fresco
  • 250 g di pomodori San Marzano (conserva casalinga)
  • 500 g di sponsali
  • 20 g di capperi di scoglio in salamoia (conserva casalinga)
  • 3 cucchiai di olio extra vergine di olive ogliarola del tarantino
  • un pizzico di origano secco
  • peperoncino secco qb

Procedimento per l’impasto: setacciare la semola e la farina ed inserirle in una ciotola. Versare in due bicchieri un po’ di acqua presa dal totale. Sciogliere in ognuno il sale e il lievito. Mescolare le farine inserendo poco per volta l’acqua con il lievito, l’olio a filo (sempre mescolando) e ancora acqua, infine l’acqua con il sale.
Inserire l’impasto in una ciotola oleata, coprire con pellicola e lasciare a temperatura ambiente per circa 20 minuti. Trascorso questo tempo mettere in frigorifero, nella parte alta, per tutta la notte. La mattina seguente toglierla dal frigo e tenerla a temperatura ambiente per circa 3 ore.

Procedimento per il ripieno: pulire gli sponsali e tagliarli a coltello. In una padella capiente inserire l’olio e gli sponsali. Mettere il coperchio e cuocere per 5 minuti. Togliere il coperchio ed aggiungere il tonno a pezzettini, i pomodori regina, i capperi, l’origano e il peperoncino. Cuocere a fiamma media per 5 minuti, mettere il coperchio e cuocere ancora a fiamma bassa per altri 5 minuti.

 

Stendere 2 sfoglie sottili. Ungere una teglia tonda da 28 cm di diametro e rivestire con una delle due. Farcire con il composto, richiudere con l’altra sfoglia e sigillare bene i bordi. Ungere con olio e bucherellare con una forchetta la superficie. Far lievitare per ½ ora.

Mettere in forno già caldo a 200° per 30 minuti o finché la superficie sia dorata. Sfornare, appoggiare su una gratella e degustare tiepida.

Spelled focaccia with fresh tuna, spring onions, San Marzano tomatoes and capers

Ingredients for 4 people

For the dough

400 g of Apulian spelled semolina
100 g of type 1 stone-ground soft wheat flour
about 450 g of water
20 g of light fruity multivarietal extra virgin olive oil
13 g of fine salt
2 g of brewer’s yeast

For the stuffing

400 g of fresh tuna fillets
250 g of San Marzano tomatoes (homemade preserve)
500 g of spring onions
20 g of rock capers in brine (homemade preserve)
3 tablespoons of Ogliarola extra virgin olive oil from Taranto
a pinch of dried oregano
dried chilli to taste

Procedure for the dough: sift the semolina and the flour and place them in a bowl. Pour a little water taken from the total into two glasses. Dissolve the salt and yeast in each one. Mix the flours by gradually adding the water with the yeast, the oil slowly (always mixing) and more water, finally the water with the salt.
Place the dough in an oiled bowl, cover with plastic wrap and leave at room temperature for about 20 minutes. After this time put in the refrigerator, in the upper part, for the whole night. The following morning, remove it from the fridge and keep it at room temperature for about 3 hours.

Procedure for the filling: clean the spring onions and cut them with a knife. In a large pan, add the oil and the spring onions. Put the lid on and cook for 5 minutes. Remove the lid and add the tuna cut into small pieces, the queen tomatoes, the capers, the oregano and the chilli pepper. Cook over medium heat for 5 minutes, put the lid on and cook over low heat for another 5 minutes.

Roll out 2 thin sheets. Grease a 28cm diameter round baking tray and line one of the two. Stuff with the mixture, close with the other sheet and seal the edges well. Grease with oil and prick the surface with a fork. Leave to rise for ½ hour.

Place in a preheated oven at 200° for 30 minutes or until the surface is golden. Remove from the oven, place on a wire rack and enjoy warm.
