Calamari ripieni con cubi di patate in umido

Ingredienti per 2 persone

  • 300 g di calamari freschi dello Ionio
  • 150 g di mollica di pane raffermo casereccio
  • acqua qb
  • 50 g di formaggio pecorino (stag. 4 mesi) pugliese
  • 1 uovo di masseria bio cat.0 pugliese
  • 1  e 1/2 di spicchi di aglio
  • 15 g di capperi dissalati
  • 15 olive celline all’acqua
  • 150 g di patate rosse della Sila
  • olio extra vergine di olive ogliarola del tarantino
  • 100 ml di brodo di calamari
  • 50 ml di vino bianco
  • sale e pepe
  • foglioline di prezzemolo

Mettere la mollica di pane raffermo casereccio in una ciotola con poca acqua, quando questa sarà completamente assorbita dal pane, strizzare.

Denocciolare le olive e tritarle.

Pelare e tagliare a cubi di 2 cm le patate.

Pulire, togliere le interiora e lavare i calamari, staccare teste e tentacoli. Asciugare e mettere da parte.

In una ciotola capiente inserire la mollica, il formaggio pecorino, 1/2 spicchio di aglio tritato, i capperi, le olive, l’uovo, il sale e il pepe al mulinello. Amalgamare aggiungendo poco a filo l’olio, fino a che il composto risulti morbido, ma compatto.

Inserire il composto in un sac a poche, riempire delicatamente  i calamari fino a 2 cm dal bordo,  chiudere bene con stecchini in legno.

In una casseruola far rosolare lo spicchio di aglio, aggiungere i calamari, far rosolare per qualche minuto, unire il vino e quando evaporato, le patate ed il brodo di calamari. Cuocere con coperchio e a fuoco basso per 25 minuti circa. I calamari e le patate saranno cotti quando inserendo i rebbi di una forchetta, esse penetreranno con facilità.

Tagliare i calamari quando tiepido, ridurre il suo fondo.

Impiattare i calamari ripieni rifinendo il piatto con i tentacoli, il fondo bollente, i cubi di patate e le foglioline di prezzemolo. Servire subito.

Stuffed squid with stewed potato cubes

Ingredients for 2 people

  • 300 g of fresh squid from the Ionian Sea
  • 150 g of homemade stale bread crumbs
  • water to taste
  • 50 g of pecorino cheese (aged 4 months) from Puglia
  • 1 organic farm egg cat.0 from Puglia
  • 1 and 1/2 of garlic cloves
  • 15 g of desalted capers
  • 15 celline olives in water
  • 150 g of Sila red potatoes
  • extra virgin olive oil from Ogliarola del Tarantino
  • 100 ml of squid broth
  • 50 ml of white wine
  • salt and pepper
  • parsley leaves

Put the crumb of stale homemade bread in a bowl with a little water, when this is completely absorbed by the bread, squeeze.

Stone the olives and chop them.

Peel and cut the potatoes into 2 cm cubes.

Clean, remove the entrails and wash the squid, remove heads and tentacles. Dry and set aside.In a large bowl put the breadcrumbs, pecorino cheese, 1/2 clove of minced garlic, capers, olives, egg, salt and whipped pepper. Mix by adding the oil a little bit, until the mixture is soft, but compact.

Put the mixture in a pastry bag, gently fill the squid up to 2 cm from the edge, close well with wooden sticks.

In a saucepan, brown the garlic clove, add the squid, brown for a few minutes, add the wine and when evaporated, the potatoes and the squid broth. Cook with lid and over low heat for about 25 minutes. The squid and potatoes will be cooked when inserting the prongs of a fork, they penetrate easily.

Cut the squid when warm, reduce its bottom.

Serve the stuffed squid, finishing the dish with the tentacles, the boiling stock, the potato cubes and the parsley leaves. Serve immediately.
