Ingredienti per 4 persone

Per i bignè

  • 60 ml di acqua
  • 60 g di farina 00
  • 60 g di burro di panna centrifugato
  • 120 g di uova intere (2)
  • 20 g di zucchero semolato
  • 1 pizzico di sale

Per la crema dei bignè

  • 250 ml di latte intero
  • 1 uovo intero
  • 75 g di zucchero semolato
  • 30 g di farina 00
  • buccia di limone
  • 125 ml di panna fresca

Per la glassa al cioccolato fondente

  • 150 g di cioccolato fondente al 85%
  • 90 ml di acqua
  • 60 g di zucchero
  • 100 ml di panna fresca
  • 2 cucchiai di crema pasticcera

Per la decorazione

  • polvere di arance essiccate
  • granella di pistacchi
  • palline di zucchero argentate

Procedimento per i bignè: inserire in una casseruola l’acqua, il burro a pezzetti, lo zucchero e il sale, mettere sul fuoco e quando inizia a bollire, inserire in un solo colpo la farina, amalgamare, rimettere sul fuoco e cuocere fino a quando il composto si stacca della pareti della casseruola. Trasferire in una coppa, allargare il composto e farlo raffreddare completamente. Aggiungere un uovo per volta e fino a che quest’ultimo non sia stato assorbito completamente, quindi inserire l’altro e amalgamare con cura. Inserire il composto in un sacca da pasticcere con bocchetta liscia, formare delle palline piccole e tonde (grandi quanto una noce) distanziate tra di loro (si gonfieranno in cottura) che adageremo in teglie anti aderenti.  Porre in forno già caldo a 220°, cuocere per circa 15 minuti, poi a 180° per altri 10 minuti, aprire quindi leggermente il forno facendo uscire il vapore. Sfornare e lasciare raffreddare completamente.

Procedimento per la crema: portare ad ebollizione il latte, in una ciotola inserire lo zucchero, le uova, la buccia di limone, la farina e frustare energicamente, aggiungere ora il latte, amalgamare bene, rimettere sul fuoco e cuocere fino a che il composto non diventi cremoso. Far raffreddare. Montare la panna ed aggiungerla alla crema. Porre in una ciotola coperta da pellicola e mettere in frigorifero.

Procedimento la glassa: inserire in una casseruola l’acqua e lo zucchero, portare ad ebollizione, inserire il cioccolato a pezzettini, togliere dal fuoco ed amalgamare con cura fino a quando non sia completamente fuso, aggiungere la panna, la crema pasticcera e mescolare ancora.

Riempire i bignè con la crema, tuffarli uno per volta nella glassa immergendoli completamente, e con due forchette, prelevarli e sistemarli nel piatto di portata a forma di piramide, rifinire con la polvere di arance essiccate, la granella di pistacchi e le palline di zucchero argentate. Mettere in frigorifero fino al momento di servirli.

Ingredients for 4 people

For the cream puffs

  • 60 ml of water
  • 60 g of flour 00
  • 60 g of centrifuged cream butter
  • 120 g of whole eggs (2)
  • 20 g of granulated sugar
  • 1 pinch of salt

For the cream of the cream puffs

  • 250 ml of whole milk
  • 1 egg
  • 75 g of granulated sugar
  • 30 g of flour 00
  • lemon peel
  • 125 ml of fresh cream

For the dark chocolate glaze

  • 150 g of 85% dark chocolate
  • 90 ml of water
  • 60 g of sugar
  • 100 ml of fresh cream
  • 2 tablespoons of custard

For decoration

  • powder of dried oranges
  • chopped pistachios
  • silver sugar balls

Procedure for the cream puffs: put the water, the butter into small pieces, the sugar and the salt in a saucepan, put on the heat and when it starts to boil, add the flour in one go, mix, put back on the heat and cook until when the mixture comes off the sides of the saucepan. Transfer to a bowl, spread the mixture and let it cool completely. Add one egg at a time and until the latter has been completely absorbed, then insert the other and mix carefully. Put the mixture in a pastry bag with a smooth nozzle, form small, round balls (as big as a walnut) spaced apart (they will swell during cooking) which we will place in non-stick pans. Place in a preheated oven at 220 °, cook for about 15 minutes, then at 180 ° for another 10 minutes, then slightly open the oven letting the steam out. Remove from the oven and allow to cool completely.

Procedure for the cream: bring the milk to a boil, in a bowl add the sugar, the eggs, the lemon peel, the flour and whisk vigorously, now add the milk, mix well, put back on the heat and cook until the mixture don’t get creamy. Let it cool down. Whip the cream and add it to the cream. Place in a bowl covered with plastic wrap and refrigerate.

Procedure the icing: put the water and sugar in a saucepan, bring to a boil, add the chocolate into small pieces, remove from the heat and mix carefully until it is completely melted, add the cream, the custard and mix again .

Fill the cream puffs with the cream, dip them one at a time into the icing by immersing them completely, and with two forks, take them out and arrange them in the pyramid-shaped serving dish, finish with the dried orange powder, chopped pistachios and sugar balls silver plated. Refrigerate until ready to serve.
