Ingredienti per 2 persone
- 180 g di riso carnaroli
- 1 calamaro medio
- 1 seppia piccola
- 4 totanetti
- 2 triglie di scoglio
- 10 gamberi
- 5 scampi
- 300 g di cozze nere
- 300 g di vongole
- 2 pomodori San Marzano pelati (homemade)
- 1 ciuffo di prezzemolo
- peperoncino (dosare in base alla sua piccantezza)
- 2 spicchio di aglio
- vino bianco
- 4 cucchiai di olio extra vergine di olive frantoio pugliese
- pepe
Togliere il bisso, rimuovere le impurità dai gusci e lavare molto bene le cozze e le vongole.
Eviscerare, squamare e sfilettare le triglie, tagliare a piccole losanghe.
Togliere i carapaci, le teste e i budelli ai gamberi e scampi (conservare 1 scampo ed 1 gambero interi per la decorazione del piatto.
Con gli scarti (lische, teste e carapaci) e con 1/2 spicchio di aglio e i gambi del prezzemolo, produrre 1/2 lt di brodo.
Pulire il calamaro, la seppia e i totanetti, togliendo loro le teste e tagliando a listarelle sottili i corpi.
In una padella far rosolare l’aglio e il peperoncino con le teste dei cefalopodi, sfumare con il vino bianco, i pomodori pelati schiacciati e aggiungere, quando necessario, un pò di brodo.
In una padella capiente e con coperchio, far aprire a fuoco vivo con olio, aglio e prezzemolo, le cozze e le vongole. Sgusciare e mettere da parte nel loro liquido filtrato. Conservare alcune cozze e vongole con guscio per la decorazione del piatto.
Tostare il riso a secco in una casseruola larga e bassa, per far sì che il riso sia distribuito bene. Tostarlo uniformemente per 2 minuti. Toccarlo con il dorso di una mano, se è molto caldo, possiamo procedere ad inserirlo nella padella in cui abbiamo rosolato le teste dei cefalopodi.
Cuocere aggiungendo il brodo bollente, a 3 minuti dalla fine aggiungere i corpi del calamaro, seppia, totanetti, scampo e gambero interi.
A fine cottura e fuori dal fuoco aggiungere i gamberi, gli scampi, le cozze e le vongole con guscio e i filetti di pesce, il prezzemolo tritato e il pepe, mescolare delicatamente, mettere il coperchio e servire dopo 1 minuto.

Seafood risotto
Ingredients for 2 people
- 180 g of carnaroli rice
- 1 medium squid
- 1 small cuttlefish
- 4 small squid
- 2 red mullets
- 10 shrimp
- 5 scampi
- 300 g of black mussels
- 300 g of clams
- 2 peeled San Marzano tomatoes (homemade)
- 1 sprig of parsley
- chili pepper (measure according to its spiciness)
- 2 clove of garlic
- white wine to taste
- 4 tablespoons of extra virgin olive oil from Puglia

Remove the byssus, remove the impurities from the shells and wash the mussels and clams very well.
Gut, scale and fillet the mullets, cut into small diamonds.
Remove the shells, heads and casings from the prawns and scampi (keep 1 prawn and 1 whole prawn for the decoration of the dish.
With the scraps (bones, heads and carapaces) and with 1/2 clove of garlic and the parsley stalks, make 1/2 liter of broth.
Clean the squid, cuttlefish and small squid, removing their heads and cutting the bodies into thin strips.
In a pan, sauté the garlic and chilli pepper with the heads of the cephalopods, deglaze with the white wine, the crushed peeled tomatoes and add, when necessary, a little broth.
In a large pan with a lid, open the mussels and clams over high heat with oil, garlic and parsley. Shell and set aside in their filtered liquid. Keep some mussels and clams in shell for the decoration of the dish.
Dry toast the rice in a large, low saucepan to ensure that the rice is well distributed. Toast it evenly for 2 minutes. Touch it with the back of your hand, if it is very hot, we can proceed to insert it in the pan in which we browned the heads of the cephalopods.
Cook adding the boiling broth, 3 minutes from the end add the squid, cuttlefish, squid, scampi and whole shrimp.
When cooked and off the heat, add the prawns, scampi, mussels and clams with shell and fish fillets, chopped parsley and pepper, mix gently, cover and serve after 1 minute.
