Ingredienti per 2 persone
- 600 g di polpo dello Ionio
- 200 g di patate rosse della Sila
- 20 g di burro di panna centrifugato pugliese
- 4 fichi fioroni di Leporano (Ta)
- pepe nero qb
- rosmarino fresco qb
- 1 cucchiaio di miele millefiori di San Marzano di S.Giuseppe (Ta)
- 2 cucchiai di olio extra vergine di olive multivarietali pugliese
- prezzemolo fresco tritato qb
Pelare e tagliare a metà le patate, pulire il polpo privandolo delle interiora e del becco. Introdurre entrambi in una pentola a pressione, aggiungere l’acqua, mettere il coperchio e porre sul fuoco a fiamma media, dal sibilo abbassare la fiamma e cuocere per 20 minuti. Estrarre il polpo e le patate e porli in un vassoio di acciaio a raffreddare completamente. Ricavare dal polpo solo i tentacoli, il resto ci servirà per un’altra ricetta.
Schiacciare con una forchetta fino a ridurre in crema le patate, ripassarla in padella con il burro e il sale. Tenere in caldo.
Lavare, asciugare e tagliare a metà i fichi, ripassarli in padella con la parte verde rivolta verso l’alto con l’olio, il pepe e il miele per 2 minuti, aggiungere il rosmarino tritato finemente.
Scottare in padella il polpo con 1 cucchiaio di olio per pochi minuti.
Impiattare la crema di patate al burro, adagiare il polpo, aggiungere il prezzemolo tritato, rifinire il piatto con i fichi. Servire subito.

Roasted Octopus on Creamed Potatoes with Pepper and Rosemary Figs
Ingredients for 2 people
- 600 g Ionian octopus
- 200 g Sila red potatoes
- 20 g Apulian centrifuged cream butter
- 4 figs from Leporano (Taranto)
- black pepper to taste
- fresh rosemary to taste
- 2 tablespoons Apulian multivarietal extra virgin olive oil
- chopped fresh parsley to taste
Peel and halve the potatoes, clean the octopus, removing the innards and beak. Place both in a pressure cooker, add the water, cover, and place over medium heat. When it hisses, lower the heat and cook for 20 minutes. Remove the octopus and potatoes and place them on a steel tray to cool completely. Remove only the tentacles from the octopus; the rest will be used for another recipe.
Mash the potatoes with a fork until creamy, then sauté in a pan with butter and salt. Keep warm.
Wash, dry, and halve the figs. Sauté them green-side up in the oil and pepper for 2 minutes, adding the finely chopped rosemary.
Season the octopus in a pan with 1 tablespoon of oil for a few minutes.
Plate the buttered potato cream, arrange the octopus on top, add the chopped parsley, and garnish with the figs. Serve immediately.
