Ingredienti per 2 persone
- 250 g di semola di grano duro pugliese
- 50 g di farina di grano tenero tipo 0 pugliese
- 1 g di lievito secco
- 1/2 cucchiaino di zucchero
- 6 g di sale fino
- 20 ml di olio extravergine di olive multivarietali pugliese
- 180 ml di acqua
- 250 g di pomodori ciliegia
- 2 cucchiai di olio extra vergine di olive multivarietali pugliese
- foglie di basilico fresco qb
- cacioricotta di capra/pecora pugliese qb

In una ciotola inserire la metà delle farine setacciate, il lievito, lo zucchero e metà dell’acqua, amalgamare mettere il coperchio e far riposare per 1 ora.
Trascorso questo tempo aggiungere l’altra metà delle farine, il sale, l’acqua ed infine l’olio, amalgamare, formare una palla e far lievitare con coperchio ermetico per 1 ora. Fare alcune pieghe, riformare la palla e far lievitare per altre 2 ore.
Lavare, asciugare e tagliare a pezzetti i pomodori, condirli con il sale, l‘olio ed il basilico spezzettato con le mani, amalgamare.
Stendere l’impasto spesso 5 mm., copparlo con un attrezzo a forma di fiore, schiacciare al centro con una cupoletta stondata e far lievitare su una teglia da forno per mezz’ora circa.
Aggiungere i pomodori, un filo d’olio e mettere in forno già caldo a 200° per 15/18 minuti.
Sfornare ed aggiungere il cacioricotta grattugiato, servire subito.

Semolina Pizzas with Cherry Tomatoes, Basil, and Cacioricotta
Ingredients for 2 people
- 250 g Apulian durum wheat semolina
- 50 g Apulian type 0 soft wheat flour
- 1 g dry yeast
- 1/2 teaspoon sugar
- 6 g fine salt
- 20 ml Apulian multivarietal extra virgin olive oil
- 180 ml water
- 250 g cherry tomatoes
- 2 tablespoons Apulian multivarietal extra virgin olive oil
- fresh basil leaves to taste
- Apulian goat’s/sheep’s milk cacioricotta to taste
- salt
In a bowl, combine half of the sifted flours, the yeast, the sugar, and half of the water. Mix well, cover, and let rest for 1 hour.
After this time, add the other half of the flours, the salt, the water, and finally the oil. Mix well, shape the dough into a ball, and let it rise with an airtight lid for 1 hour. Fold the dough over the dough, shape it into a ball, and let it rise for another 2 hours.
Wash, dry, and chop the tomatoes. Season with salt, oil, and torn basil. Mix well.
Roll out the dough to a 5 mm thickness, cut it out with a flower-shaped tool, flatten it in the center with a rounded dome, and let it rise on a baking sheet for about half an hour.
Add the tomatoes, a drizzle of oil, and bake in a preheated oven at 200°C (400°F) for 15-18 minutes.
Remove from the oven and top with grated cacioricotta. Serve immediately.
