Zucca spaghetti ai pomodori d’inverno e rosmarino gratinata al parmigiano

Ingredienti per 2 persone

  • 1 kg di zucca spaghetti
  • 2 carota
  • 2 coste di sedano
  • 4 cipolline dorate
  • 200 g di pomodori d’inverno (anzert)
  • 2 spicchi di aglio
  • rosmarino fresco qb
  • 30 g di parmigiano reggiano
  • sale e pepe
  • 3 cucchiai di olio extra vergine di olive leccine pugliese

Togliere la prima foglia alle cipolle, pelare le carote, sbucciare l’aglio e lavare il sedano, tritarle finemente e rosolarle in 2 cucchiai di olio, sale e pepe per 10 minuti e con coperchio. Terminata la cottura aggiungere il rosmarino tritato.

Lavare, asciugare e tagliare a metà i pomodori d’inverno e rosolarli in una padella con 1 cucchiaio di olio, salare, mettere il coperchio e cuocere 10 minuti. Frullare e setacciare.

Lavare, asciugare e tagliare a metà la zucca spaghetti, svuotarla dai semi e filamenti interni con un cucchiaio. Posizionare le due metà a testa in giù in una teglia con carta forno, cuocete in forno già caldo a 180° per 45 minuti o finché, bucandola con uno stecchino, lo stesso entrerà agevolmente. Sfornare e farla intiepidire. Trascorso questo tempo raschiare le due metà con i rebbi di una forchetta, avendo cura di arrivare fino alla buccia.

Condire la zucca spaghetti con il trito di verdure e metà del parmigiano, sistemarla nell’involucro, aggiungere la salsa di pomodori d’inverno e il restante parmigiano, mettere in forno a 180° posizione grill per 5 minuti. Sfornare e servire subito.

Spaghetti squash with winter tomatoes and rosemary au gratin with parmigiano

Ingredients for 2 people

  • 1 kg of spaghetti squash
  • 2 carrot
  • 2 sticks of celery
  • 4 golden onions
  • 200 g of winter tomatoes
  • 2 cloves of garlic
  • fresh rosemary to taste
  • 30 g of Parmigiano reggiano cheese
  • salt and pepper
  • 3 tablespoons of extra virgin olive oil from Puglia

Remove the first leaf from the onions, peel the carrots, peel the garlic and wash the celery, chop finely and brown in 2 tablespoons of oil, salt and pepper for 10 minutes and with a lid. When cooked, add the chopped rosemary.

Wash, dry and cut the tomatoes in half in winter and brown them in a pan with 1 tablespoon of oil, add salt, cover and cook for 10 minutes. Blend and sift.

Wash, dry and cut the spaghetti squash in half, empty it of seeds and internal filaments with a spoon. Place the two halves upside down in a baking tray with parchment paper, bake in a preheated oven at 180 degrees for 45 minutes or until, piercing it with a toothpick, it will enter easily. Remove from the oven and allow to cool. After this time, scrape the two halves with the tines of a fork, taking care to reach the peel.

Season the spaghetti squash with the chopped vegetables and half of the parmigiano, arrange it in the wrapper, add the winter tomato sauce and the remaining parmigiano, put in the oven at 180 ° grill position for 5 minutes. Remove from the oven and serve immediately.
