Creste di gallo ai broccoli e acciughe all’aglio su crema di fave secche e pane aromatico croccante

Ingredienti per 4 persone

per la sfoglia

  • 200 g di semola di grano duro pugliese
  • acqua qb

per il ripieno

  • 400 g di broccoli
  • 1 spicchio di aglio
  • 2 acciughe salate
  • 2 cucchiai di olio extra vergine di olive leccine
  • sale e pepe nero

per la crema di fave secche

  • 100 g di fave secche sgusciate pugliesi
  • 500 ml di acqua
  • 1 cucchiaio di olio extra vergine di olive leccine
  • sale

per il pane aromatico croccante

  • pane casereccio grattugiato
  • 1/2 spicchio di aglio
  • pepe nero
  • 1 cucchiaino di olio extra vergine di olive leccine
  • 2 acciughe sott’olio
  • 2 cucchiai di olio extra vergine di olive celline

Per il ripieno: dissalare sotto acqua corrente le acciughe, asciugarle poi con carta assorbente. Pulire e ridurre in cimette i broccoli, conservare la parte più tenera dei gambi tagliandola a pezzettini, conservare le foglie più piccole e tenere. Scottare in acqua salata le foglie per 2 secondi, sgocciolare, porre in acqua fredda, sgocciolare ancora, asciugare e ungerle con un filo di olio. Lessare in acqua salata per 4 minuti le cimette. Sgocciolarle e ripassarle in padella con l’olio, l’aglio, le acciughe e il pepe, fino ad asciugare l’eventuale residuo di liquidi. Assaggiare e se necessario aggiungere il sale. Togliere l’aglio, conservare qualche cimetta per la decorazione del piatto, quindi schiacciare il resto con una forchetta.

Procedimento per la sfoglia: porre su una tavola in legno la semola, aggiungere a filo l’acqua e lavorare l’impasto fino ad ottenere un composto liscio e compatto. Stendere delle sfoglie sottili un paio di millimetri, adagiare il composto di broccoli, chiudere a mezzaluna sigillando e pizzicando bene il bordo per ottenere le creste di gallo. Porre su un piano di legno ricoperto di semola e far riposare per 1 ora circa.

 

Procedimento per la crema di fave secche: inserire le fave in una ciotola contenente 500 ml di acqua per 1/2 ora. Porre il contenuto in una pentola di coccio e cuocere per 20 minuti circa a fiamma bassa, aggiungere l’olio, il sale e con un mixer ad immersione frullare. Tenere in caldo.

Procedimento per il pane aromatico croccante: in un padella anti aderente inserire il pane casereccio grattugiato, l’aglio, 1 cucchiaino di olio e il pepe, far tostare a fiamma bassissima fino a che diventi dorato. Togliere dal fuoco e posizionare, togliendo l’aglio, su un piatto ricoperto di carta assorbente.

Nella stessa padella inserire ora 2 cucchiai di olio e le acciughe.

Lessare le creste di gallo per 4 minuti, sgocciolarle ed inserirle in padella, amalgamare delicatamente per 1 minuto.

Impiattare la crema di fave secche, posizionare le creste di gallo, rifinendo il piatto con le foglie e le cimette di broccoli, le acciughe e il pane croccante. Servire subito.

Fresh pasta “Creste di gallo” with broccoli and garlic anchovies on a cream of dried broad beans and crispy aromatic bread

Ingredients for 4 people

For the pastry
200 g of Apulian durum wheat semolina
water to taste

For the stuffing
400 g of broccoli
1 clove of garlic
2 salted anchovies
2 tablespoons of extra virgin olive oil from Leccine
salt and black pepper

For the “broad bean” cream
100 g of dried pugliese shelled broad beans
500 ml of water
1 tablespoon of extra virgin olive oil from Leccine
salt

grated homemade bread
1/2 clove of garlic
black pepper
1 teaspoon of extra virgin leccine olive oil
2 anchovies in oil
2 tablespoons of extra virgin celline olive oil

For the filling: desalt the anchovies under running water, then dry them with absorbent paper. Clean and trim the broccoli into florets, keep the most tender part of the stems by cutting it into small pieces, keep the smaller and tender leaves. Blanch the leaves in salted water for 2 seconds, drain, place in cold water, drain again, dry and grease them with a drizzle of oil. Boil the florets in salted water for 4 minutes. Drain them and sauté them in a pan with the oil, garlic, anchovies and pepper, until any liquid residue is dry. Taste and add salt if necessary. Remove the garlic, keep some florets for the decoration of the dish, then mash the rest with a fork.

Procedure for the dough: place the semolina on a wooden base, add the water slowly and work the dough until the mixture is smooth and compact. Roll out thin sheets a couple of millimeters, lay the broccoli mixture, close in a crescent, sealing and pinching the edge well to obtain the rooster’s combs. Place on a wooden surface covered with semolina and let it rest for about 1 hour.

Procedure for the dried broad bean cream: place the beans in a bowl containing 500 ml of water for 1/2 hour. Place the contents in an earthenware pot and cook for about 20 minutes over low heat, add the oil, salt and blend with an immersion mixer. Keep warm.

Procedure for crunchy aromatic bread: in a non-stick pan insert the grated homemade bread, garlic, 1 teaspoon of oil and pepper, toast over very low heat until golden. Remove from the heat and place, removing the garlic, on a plate covered with absorbent paper.

In the same pan, now add 2 tablespoons of oil and the anchovies.

Boil the cockscombs for 4 minutes, drain and place them in the pan, mix gently for 1 minute.

Serve the cream of dried broad beans, place the pasta, finishing the dish with the broccoli leaves and florets, anchovies and crispy bread. Serve immediately.
