Osteria Cerina – San Vittore (FC)

Le dolci colline a terrazza sulla piccola Cesena, la notte brilla con le stelle dal panorama del B&B Montesterlino del nostro amato Luca, talent scout per tanti musicisti ora in ritiro contemplativo, da qui scendiamo nel pianoro di San Vittore per andare da “Osteria Cerina”, riferimento da circa 70 anni. La Nonna ovviamente non è più tra noi ed al comando oggi c’è Graziella Dallara una signora tosta ed ospitale, fiera di lavorare fra questi tavoli dall’età di 16 anni. La “Generalessa” Graziella, ci tiene a sottolineare che ad oggi è Lei “Cerina”, artefice di questa rinomata osteria e ci mostra fiera il mattarello usurato con i solchi delle dita ben visibili.

The gentle terraced hills on the small Cesena, the night shines with the stars from the panorama of the B&B Montesterlino of our beloved Luca, talent scout for many musicians now in contemplative retreat, from here we descend into the plateau of San Vittore to go to “Osteria Cerina” , reference for about 70 years. Grandma is obviously no longer with us and today there is Graziella Dallara, a tough and hospitable lady, proud to work among these tables from the age of 16. The “Generalessa” Graziella is keen to point out that today she is “Cerina”, the creator of this renowned tavern and proudly shows us the worn rolling pin with clearly visible finger grooves.

 

La degustazione

Antipasti: uovo strapazzato (cottura perfetta) e tartufo bianco, fegatini di coniglio con cipolla e saba (piatto tendenzialmente dolce, dal gusto ampio e aromatico)

Primi piatti: ravioloni di ricotta e spinaci su fonduta al mascarpone e guanciale croccante (piatto ricco, sapido, mordibo e avvolgente…ottimo!) e il “Canolo della Cerina” ovvero pasta fresca all’uovo ripiena di carne mista, fritta e passata poi in forno a gratinare con ragù di carne e besciamella (piatto storico in menù dal 1965…degustandolo abbiamo avvalorato la scelta felice)

Secondi piatti: agnello cotto nel forno a legna e il galletto alla cacciatora con pomodori e patate (entrambi buoni, saporiti e cotti alla perfezione)

Dessert: pesche alle creme pasticcera e cioccolato e cheese cake ai frutti di bosco, valgono entrambi il viaggio…bravissima Sig.ra Graziella!

Vino in abbinamento: “Il Costone” Sangiovese Bertinoro Riserva 2013 della Cantina Braschi

The tasting

Appetizers: scrambled egg (perfect cooking) and white truffle, rabbit livers with onion and saba (basically sweet dish, with a wide and aromatic taste)

First courses: ricotta and spinach ravioli on mascarpone fondue and crispy bacon (rich, savory, mordor and enveloping dish … excellent!) and the “Canolo della Cerina” or fresh egg pasta filled with mixed meat, fried and then passed in the oven to cook au gratin with meat sauce and béchamel (historic dish on the menu since 1965 … tasting it we have confirmed the happy choice)

Second courses: lamb cooked in a wood-fired oven and the rooster alla cacciatora with tomatoes and potatoes (both good, tasty and cooked to perfection)

Dessert: peaches with custards and chocolate and cheese cake with berries, both are worth the trip … very good Mrs. Graziella!

Matching wine: “Il Costone” Sangiovese Bertinoro Riserva 2013 from Cantina Braschi.

 

Queste osterie storiche ci emozionano sempre, per il forte calore, per la passione che si percepisce limpida, da chi ha dedicato non solo tutta la vita di lavoro ai propri ospiti, nobilitando la “ristorazione”, l’arte del ristorare.

Piatti veri, forti, decisi, concreti, che non dimentichi, ed il brusio acceso della sala ne è chiara testimonianza.

These historic taverns always excite us, for the strong heat, for the passion we perceive clear, from those who have dedicated not only their entire work life to their guests, ennobling the “restaurant”, the art of restoring.

Real dishes, strong, decisive, concrete, that do not forget, and the loud buzz of the hall is clear evidence of this.
