Roast beef di vitello con amarene al Raboso

Ingredienti per 2 persone

  • 500 kg di magatello di vitello
  • 1 mazzetto aromatico (alloro, rosmarino, salvia)
  • 1 spicchio di aglio
  • 150 g di amarene sciroppate al sole (vedi ricetta qui)
  • 50 ml di vino Raboso
  • 2 cucchiai di olio extra vergine di olive Grossa di Gerace di Locri (RC)
  • sale e pepe
  • ciuffi di rosmarino

Inserire in una casseruola da forno, bassa e capiente, il mazzetto aromatico legato con spago da cucina e l’olio. Porre su fiamma media ed aggiungere il vitello, rosolarlo bene da tutti i lati, salare e pepare. Trasferire in forno già caldo a 160° per 18 minuti. Trascorso questo tempo, sfornare e farlo riposare coperto da un foglio di alluminio.

Porre le amarene in una padella con qualche cucchiaio di sciroppo, rosolare per 1 minuto, aggiungere il vino e far sfumare.

Tagliare a fette sottili il vitello e distribuire nei piatti, aggiungere le amarene al Roboso, guarnire con ciuffi di rosmarino e servire subito.

Veal roast beef with sour cherries in Raboso wine

Ingredients for 2 people

  • 500 kg of veal
  • 1 aromatic bunch (laurel, rosemary, sage)
  • 1 clove of garlic
  • 150 g of sour cherries in syrup in the sun (see recipe here)
  • 50 ml of Raboso wine
  • 2 tablespoons of extra virgin olive oil Grossa di Gerace di Locri (RC)
  • salt and pepper

Place the aromatic bunch tied with kitchen string and the oil in a shallow, large casserole. Put on medium heat and add the veal, brown well on all sides, add salt and pepper. Transfer to a preheated oven at 160 degrees and cook for 18 minutes. After this time, remove from the oven and let it rest covered with aluminum foil.

Place the sour cherries in a pan with a few tablespoons of syrup, brown for 1 minute, add the wine and let it evaporate.

Cut the veal into thin slices and distribute into dishes, add the cherries to the Roboso wine, garnish with rosemary tufts and serve immediately.
