Dolce di pane alla crema pasticcera agrumata su cioccolato fondente e pistacchi

Ingredienti per 4 persone

  • 4 fette di pane casereccio di semola rimacinata di grano duro
  • cacao in polvere
  • granella di pistacchi
  • cioccolato fondente all’85%

per la crema pasticcera:

  • 300 ml di latte intero
  • 2 uova
  • 150 g di zucchero semolato
  • 60 g di farina 00
  • buccia di limone non trattatto grattugiata

per la bagna:

  • 200 ml di latte intero
  • 1 tazzina di caffè (80%Arabica 20%Robusta)
  • 1 cucchiaino di zucchero semolato

Procedimento per la crema: portare ad ebollizione il latte, in una ciotola inserire lo zucchero, le uova, la buccia di limone, la farina e frustare energicamente, aggiungere ora il latte, amalgamare bene, rimettere sul fuoco e cuocere fino a che il composto non diventi cremoso.

Procedimento per la bagna: riscaldare il latte, aggiungere il caffè, lo zucchero e miscelare.

Togliere la crosta e tagliare a rettangoli regolari il pane. La parte restante del pane con crosta assottigliarlo con un mattarello e tostarlo su padella anti aderente.

Prendere una pirofila di ceramica, inzuppare i rettangoli di pane (porre attenzione a non lasciare troppo nella bagna, altrimenti risulteranno troppo inzuppati) e adagiarli allineandoli in modo da realizzare uno strato uniforme, aggiungere uno strato di crema e procedere alternando gli strati fino ad esaurimento degli ingredienti. Coprire con pellicola per alimenti e porre in frigo fino al momento di servirlo.

Fondere il cioccolato a bagnomaria.

Impiattare il cioccolato fondente fuso, adagiare delicatamente il dolce rifinendo con cacao in polvere e la granella di pistacchi.

Citrus custard bread dessert on dark chocolate and pistachios

Ingredients for 4 people

  • 4 slices of homemade durum wheat semolina bread
  • cocoa powder
  • grains of pistachios
  • 85% dark chocolate

for the custard:

  • 300 ml of whole milk
  • 2 eggs
  • 150 g of granulated sugar
  • 60 g of 00 flour
  • grated untreated lemon peel

for the wet:

  • 200 ml of whole milk
  • 1 cup of coffee (80% Arabica 20% Robusta)
  • 1 teaspoon of granulated sugar

Procedure for the cream: bring the milk to the boil, put the sugar, the eggs, the lemon zest in a bowl and whisk vigorously, add the milk, mix well, put back on the heat and cook until the mixture becomes creamy .

Wet procedure: heat milk, add coffee, sugar and mix.

Remove the crust and cut the bread into regular rectangles. The remaining part of the bread with crust thin it with a rolling pin and toast it on a non-stick pan.

Take a ceramic baking dish, soak the rectangles of bread (be careful not to leave too much in the wet, otherwise they will be too soaked) and place them aligning them so as to create an even layer, add a layer of cream and proceed alternating the layers until exhaustion of the ingredients. Cover with plastic wrap and refrigerate until ready to serve.

Melt the chocolate in a bain-marie. Serve the melted dark chocolate, gently lay the cake finishing with cocoa powder and the chopped pistachios.
